1. Preheat oven to 425 degrees with cast iron skilled inside. 2. Whisk 3 eggs, 1/2 cup flour, 1/2 cup milk, 1 tsp sugar and a dash of nutmeg until smooth. 3. Place 3 Tbsp butter in skillet and swirl until melted. Add batter to pan and bake for 20 minutes, until is puffed and golden. Lower oven to 300 degrees and bake additional five minutes. 4. Remove from oven, cut into servings and top with powdered sugar, fruit, jelly, maple syrup, lemon juice, etc.
